Why do you dry mushrooms?
Mushroom is a kind of indoor edible fungus. It is a kind of edible fungus with wide artificial cultivation, high yield and large consumption in the world, which is cultivated in many countries.Benefits:
1)It can prevent and control the occurrence of hypertension.
2)It can improve the body’s immunity.
Mushrooms are fantastic when fresh, but the reality is that they go bad very quickly after you find or buy them.So drying mushrooms is a wonderful way to preserve them for long-term storage.
How to dry mushrooms?
1)cut mushrooms. The thicker the mushrooms, the longer they will dry. To speed up the drying process and shorten the drying process, the mushrooms should be cut into slices about 3mm thick, which can not only keep the flavor, but also be easy to plate, and the drying time is much shorter than that of the whole mushroom.2)Put mushrooms on the baking tray. The mushrooms must be laid flat together, and they should not be overlapped, because this may cause them to fuse during drying, finally affecting the drying effect and causing some mushroom slices to stick together, which can not be taken away after drying. Put all the mushroom slices on one layer. Remember not to add oil, because mushrooms will absorb oil, which will change their taste and take longer to dry mushrooms.
3)Preheat the oven to 65 degrees Celsius. After the oven reaches the specified temperature, put the baking tray and mushrooms into the oven, and bake for about one hour.
4)Take the mushrooms out of the oven in an hour. When you take them out, turn them over and let them dry evenly. At this time, in the drying process, remove water with a paper towel or dry cloth.
5)Put the mushrooms back in the oven and bake them for another hour until they are completely dry. When you take out mushrooms, check whether there is any residual moisture on their surfaces. If there is, turn them over, wipe off the moisture with a paper towel, and then put them back in the oven to continue drying.
6)Repeat the above process repeatedly until the mushrooms are thoroughly dried. Dried mushrooms should be crisp and hard, like cookies.
7)Let the mushrooms cool in an open container.
8)Once completely cooled, put the mushrooms into a jar with a working seal. Keep the container in a dark and cool place.

Dehydrating mushrooms in a dehydrator is a good way to preserve a large number of mushrooms. This method can help you ensure that mushrooms will not deteriorate before you start eating. The signs that mushrooms begin to rot include mucus accumulation on the surface, wrinkles and shrivels of mushrooms, black or black spots of mushrooms, or any unpleasant smell of mushrooms. When using the dehydrator, you should put the cleaned mushroom slices on the dehydrator tray to ensure that no fragments touch or overlap. Only when the best airflow around mushrooms is achieved, they will dry faster and more evenly. If they touch or overlap, some areas may retain some moisture. Dry the mushroom slices at 110 degrees Fahrenheit until the mushroom slices are dry. This process takes 4 to 6 hours for 1/4 inch slices and 8 hours for thicker slices. Allow dried mushrooms to cool completely before storage.
Storage and rehydration, transfer the cooled dried mushrooms to a glass jar, and close the lid tightly. Mark the jar with contents, including mushroom type and drying date. Store the jar away from direct light or heat. When using dehydrated mushrooms, you can pour boiling water into a heat-resistant bowl. Soak them for 20 to 30 minutes. Drain the liquid, but keep the strong soaking liquid for soups and sauces. Use rehydrated mushrooms like fresh mushrooms.
Advantages: The advantages of dehydrated mushrooms are obvious. The biggest advantage of dehydrated mushrooms is that you can store and use them for several months. Some mushrooms need dehydration to enjoy because they are too hard to eat in other ways. In addition, many mushrooms need to be cooked to remove bacteria, and dehydration is an effective way to ensure that your fungi are safe to eat.

How to store small size dry mushrooms?
1: Dried mushrooms need to be sealed. We can use airtight containers such as iron cans and ceramic jars to store dried mushrooms, and the cans should be tightly covered. To minimize the opening of the container, to reduce the air into, to avoid oxidation reaction leading to deterioration.
2: Dried mushrooms need to be kept away from light. The infrared ray in the light will make the dried mushroom warm up, thus accelerating the deterioration of the dried mushroom. Therefore, it is necessary to avoid storing dried mushrooms in strong light. Dried mushrooms are best kept in a closed dark place at home. At the same time, we should also avoid packaging with transparent materials.
3: Dried mushrooms need to be dried and preserved. After putting the dried mushrooms for some time, some water may come in when eating them. It is suggested to put them in the sun every other period to dry them. This can remove the water and kill some bacteria. It is also good for preserving the dried mushrooms.
4: Dried mushrooms need to be preserved separately. Mushrooms have strong adsorption, so they must be stored separately. The containers for storing dried mushrooms should not be mixed with other articles. In addition, the containers with odor volatilization or odor adsorption should not be used to store Lentinus edodes.
5: Dried mushrooms need to be preserved at low temperatures. Dried mushrooms are best stored in some low-temperature environments because, in a low-temperature environment, microorganisms will not be very active, which can effectively prevent the deterioration of dried mushrooms.
