Method of drying yam:

- 1. First, wash the yam with clean water
- 2. Peel off the skin of the yam
- 3. Use a knife to cut the yam into slices
- 4. Soak the yam slices in water at 90°C for half an hour (the purpose is to soak out the mucus of the yam).
- 5. Then put the yam slices on the drying rack and put them in the sun to dry
- 6. After drying for 2~3 days, the yam has been dried
- 7. Seal the dried yam with a sealed bag, which can be stored for a long time.
How to use a dehydrator to dry large quantities of yam:
1. Raw material selectionChoose yam with uniform thickness, smooth surface, no pests, and no frostbite.
2. Cleaning
Soak the yam in the pool for 10-15 minutes, brush off the impurities on the surface, and rinse with water for 2-3 times.
3. Peel and cut into pieces
Use a peeling machine or manually peel the yam, and then slice it. The beauty and completeness of manual slices are better than that of machine slices. The thickness of the machine slices is uniform and the efficiency is high.
4. Drying
The first stage, the heating stage: spread the sliced yam on the baking shelf and push it into the drying room. Start the dryer and heat the temperature in the box to 50°C for 0.5-1.5h. When the humidity rises, the dehumidification starts, and the constant temperature can be maintained during dehumidification.
The second stage, constant rate drying and dehumidification stage: This stage can be divided into two stages, high humidity and low temperature stage, medium humidity and medium temperature stage.
During the high-humidity and low-temperature stage, the temperature range is 40-50℃, which can avoid the change of the color of yam caused by high temperature and humidity. Observe the change of water vapor on the surface of the yam and dehumidify at any time. The time is 3-3.5h.
In the mid-humidity and mid-temperature section, the temperature is 50-60°C. At this stage, fresh air and dehumidification should be appropriately replaced, and the humidity should be adjusted reasonably.
The third stage, the speed reduction and shaping stage: the temperature in this stage is 60-70°C, not more than 70°C in the early stage, and not more than 75°C in the later stage, and the time is 5-7h.
5. Packaging:
After the yam is dried, the moisture content is generally maintained at about 10%, and unqualified products are removed, and then packaged and stored as required.
Precautions:
Pay attention to the quality of yam, so as not to affect the quality of yam drying.The dried yam should be cooled for a while and then packaged to prevent the yam from returning to moisture again.
