How to Make Dried Mango/How To Dehydrate Mango:

The traditional method of making dried mangoes:

1. Peel the mango
2. Use a knife to cut the mango into slices of about 0.5mm
3. Put an appropriate amount of water and sugar in the pot and cook until it melts (add water and sugar according to the number of mangoes)
4. Pour the boiled sugar water into the basin, and put the mango slices in the sugar water. The water is just over the mango. Seal the basin with plastic wrap and put it in the refrigerator for about 8 hours
6. Take out the mangoes from the refrigerator, pour the mangoes into a basket to filter out the water, then put the mango slices in the refrigerator for an hour, and air dry the water
7. Take out the mango slices and place them neatly on the grid
8. Put it in the sun for 2 days, put it away in the refrigerator at night, until the surface shrinks and feels dry, and the dried mango is ready.

Problems in traditional mango drying process:

Sun-drying:
1.It occupies a large area and requires a large drying yard to meet mass production;
2.The labor intensity is high, and the material needs to be turned frequently under strong ultraviolet rays. More and more workers are no longer willing to engage in this work;
3. Poor sanitary conditions, unable to prevent the breeding of flies and insects;

How to use a dryer to dry mangoes:

1. Material selection:
Choose mangoes with a small nucleus and thick flesh. The maturity of the mango is 8-9. If the maturity is too low, the color and flavor of the mango will be poor, and if it is overripe, it will be easy to rot.
2. Cleaning:
Wash the mangoes by hand or with a washing machine
3. Peel and slice:
The mango peel must be cleaned. If it is not cleaned, it is easy to brown during processing, which will affect the color of the finished product. The peeled fruit is sliced with a blade, and the thickness is about 8-10mm.
4. Color protection treatment:
Use the method of sulfur fumigation or sulfur leaching in the food requirements standard.
5. Dehydration:
Put the dried mangoes evenly after the color protection treatment on the drying rack (drain the water first if the sulfur is soaked)
6. Drying
The first stage: Set time 4H, temperature 45℃, humidity control at 65%.
Second stage: Set time 6H, temperature 55℃, humidity control at 42%.
The third stage: Set the time to 2H, the temperature is 62℃, and the humidity is controlled at 26%.
When the time is over, the dried mango can be guaranteed to be dried.
7. Back to soft packaging:
When the moisture content of the dried mango reaches about 15%-18%, put the dried mango into a closed container and let it soften for 2-3 hours so that the moisture content of each part is balanced, the texture is soft, and it is convenient for packaging.
