Dehydrate Tomato in a Dehydrator/Tomato Drying Process
Introduction to tomato:
The flesh of tomato is thick and juicy, the seed is yellow, and the flowering and fruiting period is summer and autumn. Tomato likes light and short sunshine. Tomato grows well in the rich loam soil with deep soil layer, good drainage and rich organic matter.Tomato processing steps:
1. Material selectionThe fruits with thick flesh, less juice, full red color, but not ripe were selected, and the fruits with insufficient maturity, diseases and insect pests, and substandard damage were eliminated.
2. Peeling
Put the washed tomato fruit in boiling water for about 1 minute, cool immediately, and peel off the tomato.
3. Squeezing juice
Dig and sew the peduncle at the fruit stalk, and squeeze out the juice gently.
4. Hardening
The fruit was soaked in 0.30% CaCl2 solution for 2 hours.
5. Cleaning
Wash and harden the embryo with water, remove the embryo and drain the water.
6. Sugar stains
The tomato embryo was soaked in 30% sugar solution for 24 hours, and the sugar solution was added with 0.30% citric acid.
7. Sugar boiling
Pour the candied tomato and the soaking solution into the sandwich pot, slowly raise the temperature until boiling. After about half an hour, immerse the tomato juice and the boiling sugar solution in the porcelain jar for 12-24 hours. So repeatedly soak 2-3 times, each time to increase the sugar concentration. When the concentration of sugar solution reaches 65%, stop the fire, pour it into the porcelain jar for 8-10 hours, then take out the tomato fruit and drain the sugar solution.
Tomato drying process:
Put the drained tomato fruit into the material tray, insert the material tray into the material truck, and dry each tray at an interval of 10 cm at 60 ℃ - 65 ℃. The drying time is set at 15-20 hours. The moisture content is about 18% and the soluble solid content is 70%.Matters needing attention:
The color of the finished product should be dark red, transparent, no sand, no sugar flow, appropriate sweet and sour, with tomato fruit flavor, sugar content of more than 65%, water content of about 18%.
