Introduction to russula

  Russula is mainly distributed in mountain forest areas with an altitude of 300 to 1000 meters. The vertical distribution of vegetation and soil is obvious, from gentle slopes to slopes with a slope of 10°-45°. Most types of red mushrooms are edible, rich in nutrients and delicious.

Russula drying process:

1.Into the room for drying:
The russula are put on the grill and sent to the drying room for baking. Place the large and thick ones with high moisture content on the upper layer, and the small and thin ones with low moisture content on the lower layer. Generally placed 8 to 10 floors. If it is placed too much, the heating temperature of the upper, middle and lower materials will be uneven. The spacing between each layer should be 30 cm.
2.Temperature control:
In the first stage of drying, when the temperature of the drying room rises to 35°C, the russulas can be dried in the room. When drying, it must be low temperature first, and then gradually increase the temperature. Generally, the temperature increases by 1°C-3°C in one hour, and the high temperature should be controlled at 60°C-75°C. Generally, the drying temperature is 35°C-40°C for 6 hours of continuous drying. It is also necessary to consider that when the temperature of the drying room is 35°C- 40°C, moisture should be discharged at full load; in the second stage of drying, the drying time of red mushrooms at 40°C- 60°C is 8-10 Hours, the drying time is 2 hours at 60°C. When the temperature rises to 40°C-60°C, the moisture can be discharged intermittently. When the drying temperature reaches 60°C, moisture can be eliminated. Excessive dehumidification can make the russula pale in color. If the dried mushroom has a water-soaked yellow color, it means that the moisture removal is not good, or the temperature is not enough, especially if the heat is stopped in the middle, it is more likely to cause this phenomenon.
3.Quality inspection:
When the drying reaches 16-18 hours, the door of the drying chamber can be opened to check whether the dryness of the mushrooms is qualified. During the test, press the junction between the cap and the stem with finger pressure. If only traces are present, the drying is qualified. If the hand feels soft and the gills are also soft, continue drying.

Precautions:
  The value of red mushrooms is relatively high, so a slow temperature rise method is used in the drying process, and the amount of dehumidification in the early stage is large, and the initial mode of precise time control is carried out in the later stage to prevent over-drying and cause the dried russula to become brittle.
  If the drying is just started, the temperature will rise suddenly, which will cause the tissue to lose water too fast, which will cause the russula cap to be deformed and not round, the gills will be folded, the cap will be cracked, the color will become black, and the enzyme activity will be destroyed. Russula loses its original fragrance. After the russula are fed into the drying room, they should be roasted continuously until they are dry. The heating must not be interrupted, and the temperature must not fluctuate. Otherwise, the color of the russula will turn black and the quality will decrease.
