Introduction to rice noodle

Rice noodle processing steps

1. Rice panning and soaking
Pour the high-quality rice into the soaked rice container. Master the water temperature of the soaked rice at about 25to promote the softening of the rice in a controllable period of time.
2. Refining
The soaked rice is refined with a professional machine. Care must be taken to grind it evenly, so that the rice milk and nutrients are fully combined, and the rice noodles are more delicate.
3. Squeeze the silk after steaming
After the rice milk is steamed at a high temperature, it solidifies into a noodle before it can be extruded. Usually choose different aperture models, the pink leather turns into rice noodles after squeezing the silk, the thickness is different, and the taste is different. Then steam the rice noodles in a steamer at 100-105 for 3-5 minutes to ensure that the rice noodles are thoroughly cooked and to ensure that the rice noodles are hygienic, clean and sterile.

Rice noodle drying process:

1. Low temperature stage
Use a heat pump dryer to remove the surface moisture of the rice noodles as much as possible in this stage, and gradually increase the temperature of the rice noodles to make the temperature inside and outside the rice noodles consistent. The temperature in this interval is generally set at about 25.
2. High temperature stage
After the rice noodles enter the high temperature stage, the internal moisture is gradually evaporated. The rice noodles are dried uniformly and formed well. The moisture of the rice noodles entering the cooling zone is basically maintained at about 13%. The temperature in this section is controlled at 38-42In the meantime, pay attention to avoid bursting caused by excessive moisture drying.
3. Cooling stage
After entering the cooling stage, the drying process of the rice noodles is basically completed. This stage is a process of decreasing temperature. The temperature is controlled according to the weather conditions and the actual dry and wet conditions of the rice noodles. Keep the temperature decreasing and prevent the rice noodles from cooling too fast, so that the surface temperature of the rice noodles is too low, the internal temperature is high, and bubble powder, which is often referred to as pollen, will not be broken.

Precautions:
According to different regions and different types of rice noodles, the drying time of rice noodle dryers is generally 8-12 hours. The baked rice noodles do not change color, do not break, have uniform dryness, good color, good taste, and good rehydration. They are also suitable for drying treatments such as noodles and sweet potato flour.
