The internal respiration is also strengthened to quickly complete the softening, de-astringency and partial dehydration (about 25%), the duration is about 12 hours, depending on the size of the persimmon fruit, and the degree of maturity can be flexibly controlled. When drying persimmons, anti-mold is very important. A little carelessness will cause mold loss in the whole roasting barn within a few hours. Therefore, it is necessary to keep the relative humidity in the barn below 70% at all times, which can effectively prevent mildew. Stop roasting, take out the persimmons, stack them for a few hours to soften them, and then perform the first kneading of the cakes, using moderate force when kneading the cakes, so that the flesh is loose and the skin is not broken. The specific pinching method is: hold the fruit in both hands and pinch it vertically and horizontally, and then rotate it with the pinch until the inside becomes soft and the persimmon core is skewed.The second drying: The kneaded persimmons are sent to the roasting room again, and the temperature is raised to 45°C-50°C for about 15 hours, so that the persimmons are quickly dehydrated by 35% again. Stop roasting, take out the dried persimmons for the second time, pile and cover them again, and perform the second kneading after softening. At this point, the dried persimmons have basically taken shape.
Dry for the third time: Keep it at 40℃-45℃ for about 10 hours. At this time, it has reached the late stage of baking and the dehydration is relatively slow. The drying procedure is: the persimmon is consistent in hardness and elasticity, with a water content of about 35%. Stop baking, take out the third-baked persimmons, stack them and soften them, and shape them. Subsequent batches of persimmons are reversed in batches according to the above method and dried in turn, so that the utilization rate of the drying room can be improved without wasting heat energy.
Precautions:
The best drying degree of dried persimmons, that is, the moisture content of dried persimmons at the end of baking is 38%-42%. If the degree of drying is too low, the moisture content of the dried persimmon is too high, the sugar is easy to dissolve in the cell sap, it is difficult to crystallize, the frosting is difficult, and it is easy to mold during the frosting process, the drying degree is too high, time-consuming and energy-consuming, and the finished product yield is low. The amount of frost is small or even no frost, the texture is hard, and the quality is poor.
