  Mulberries are harvested from April to June every year when the fruits are ripe, dried or lightly steamed and dried for consumption. They can also be used for soaking in wine. Mature mulberries are oily, sweet and sour, preferably large, thick, purplish-red, and rich in sugar.

Mulberry processing steps

  Mulberry is a kind of berry. If it is squeezed, it is easy to break and the juice will flow out. According to the weather conditions, try to pick it quickly, transport it, and spread it quickly to prevent the mulberry from fermenting due to too long accumulation time, which affects the quality of dried mulberries. Moreover, plastic frames containing mulberries shall not be piled up during transportation.
Spread the picked mulberries thinly in the plaque, remove the dead leaves and dry branches in the ears, and remove the moldy or discolored unqualified fruit particles. Put the ones with similar maturity in the tray.

Mulberry drying process:

  It takes 18 hours to complete the drying using the air energy heat pump dryer. Generally, every 4 kg of fresh mulberries can be made into 1 kg of dried mulberries. The mulberries that have been sorted and removed are loaded into a sieve and loaded into the material truck. Each material truck should not exceed 14 screens, and the spacing between the screen layers should be controlled at about 10 cm. Take the 10P machine as an example, do not exceed 10 material trucks to ensure that there is a reasonable gap in the drying room to facilitate the passage of hot air.
Mulberries are berries with high sugar content and high water content. The longer fruit shape is composed of a small fruit sac. It is difficult for the water to come out, so it takes a long time. At the same time, the drying temperature should not be too high. If the temperature is too high, it will easily affect the effective content of anthocyanins. In the first stage of drying, the temperature is increased for one hour, and the drying mode does not remove moisture, so that the drying room rises to about 50°C. The second stage is set to drying + dehumidification mode, the target humidity is 60%, and the target temperature is set to 55°C. In the third and fourth stages, each stage will increase by 5°C, and the target humidity will decrease by 10%, so that the drying room will continue to exhaust moisture. In the final stage, the target humidity is set to about 15%. If conditions permit, consider at the end of the fourth stage, stop the machine and let it stand for a period of time before re-drying, so that the moisture inside the dried fruit will be heated and volatilized by the heat of the re-drying after the water seeps out, the dried fruit will have a better shape and better overall energy efficiency. .
The dried mulberries should be further sieved, and impurities such as stalks, dried leaves and shredded grains can be removed by windmill, sieve or natural wind. Then, it is manually graded according to color fullness and sourness and sweetness, and packed in food bags or vacuum packaging bags and stored.
