Introduction to matsutake:
Matsutake has a unique rich fragrance, it is a rare and precious natural medicinal fungus in the world, and it is a second-class endangered protected species in my country. Matsutake is often born in drier forest land with few nutrients, and usually grows in autumn.Matsutake processing steps:
First peel off the soil and weeds on the fungus, use a ceramic knife or bamboo knife to carefully cut off the sand at the root, try not to use a steel knife, the steel knife will make the matsutake smelly, and finally brush with water to remove the floating dust on the surface. Be fast, use a small soft brush when necessary, and remember not to soak the matsutake in water, because the taste of matsutake will be greatly reduced when it absorbs water. When loading the plate, the cap is facing up and the stalk is facing down, and the matsutake must be dried within 6 hours after harvest. If refrigerated conditions are available, the storage time can be appropriately extended.Matsutake drying process:
Only when the temperature of the drying room is raised to 35℃ can the matsutake be pushed into the drying number. When drying, it must be baked at a low temperature first, and then the temperature is gradually increased. Generally, the temperature should be increased by 1°C to 3°C in 1 hour. The maximum temperature should be controlled below 70°C. Generally, it is required to bake between 35°C and 40°C for 6 hours, and bake between 40°C and 60°C for 8-10 hours, 60°C. Bake between -70℃ for 2 hours. The higher the moisture content of matsutake, the longer it takes to bake at low temperature. If the temperature rises at the beginning of the baking process, it will cause the tissue to lose water too quickly. The mushroom cap is deformed and not round, the gills are inverted, the cap appears cracked, and the color turns black. It also destroys the enzyme activity and makes the matsutake lose its original fragrance. The matsutake needs to be continuously dried when it is sent to the drying room. Drying and heating must not be interrupted. The temperature control needs to be precise and not too fluctuating, otherwise it will affect the drying quality.In the drying process of matsutake, in addition to strictly controlling the heating temperature, timely dehumidification is also an important part. The basic principle of dehumidification is: in the early stage of matsutake baking, when the temperature of the drying room is maintained at 35℃- 40℃, the humidity should be discharged at full load. When the temperature rises to 40℃-60℃, it can be intermittently dehumidified, 60℃ The above amount of moisture is controlled by time, and not excessively, which will make the color of matsutake whitish.
After drying for 16-18 hours, you can open the door of the drying room to check whether the dryness of the matsutake is qualified. During the inspection, press the junction between the cap and the stalk with your fingers. If there are only traces, the dryness is qualified.
