2. Peel off
There are two types of peeling: manual peeling and mechanical peeling. At present, due to the low output of nuts in my country and fear of damaging the nuts, manual peeling is used. Before manual peeling, it is best to put the nuts with the skin on the drying ground for 1-2 days to let the peel dry and dehydrate and crack, and then it is easy to peel it by hand. However, mechanical peeling requires high green moisture content in the peel, and peeling is performed when the kernel and shell are in a compact state.
3. Slit
Find a tool to "slit". If you want to make milky macadamia nuts, you must first open the seams. The function of the seams is to let the flavor blend into the nuts. If you want to make original macadamia nuts, you can sew them after making them.
4. Seasoning

Macadamia drying process:
Drying is a very critical part of the macadamia processing process, which directly determines the shelf life of the fruit and the taste and quality of the final product. The just harvested macadamia nut contains up to 30% moisture, and the drying process can reduce the moisture content to 2-3%, the fruit will shrink to the inside of the shell and separate from the inner wall of the shell, so that the kernel will not be damaged when the fruit is broken.The drying temperature and time generally used for shelled fruits are as follows: 30°C (2-3 days) -38°C (1-2 days) -45°C (1-2 days) -50°C (drying until required Water content). The drying time is affected by the following conditions: the initial humidity of the fruit, the relative humidity of the air, and the final moisture content required by the fruit after drying. If the initial humidity, relative air humidity, and the required moisture content are all high, the time required is longer, otherwise it is shorter, depending on the specific situation.
The initial drying temperature should be determined according to the moisture content of the kernel of the shelled fruit. If the moisture content of the kernel is 25-28%, the drying temperature should not exceed 30°C. When the moisture content of the nuts is 15-20%, the drying temperature should not exceed 38°C. When the moisture content of the nuts is 10-15%, the drying temperature should not exceed 45°C. When the moisture content of the nuts is 7-10%, the drying temperature should not exceed 50°C. Otherwise, the shell will break during the baking process and the kernel will brown, which will reduce the quality of the product.
