Introduction to maca:

During the baking process, it is necessary to master the three processes of temperature from low temperature to high temperature + cooling.When entering the furnace in the first stage, because the water content is still high, the temperature is gradually increased and maintained for 12-15 hours to gradually evaporate the water. The temperature is adjusted at 35°C-45"C, and the humidity is set to 30% to automatically dehumidify. Continue for about 1 day to discharge most of the water. The temperature in the second stage is gradually increased and set at 55°C-60°C to evaporate the water. The humidity is adjusted at 38% to automatically dehumidify and let the water vapor discharge. This continues for 12 Hours to drain most of the water. In the third stage, the temperature is lowered to 45°C-55°C, the humidity is adjusted to 35%, and the baking is continued until drying, so that the weight of the fruit is reduced to 25-30% of the fresh fruit. Serve dried fruit. After drying, close it and let it cool down naturally, and then take it out after cooling down.
During the drying process, the upper, middle, lower, surrounding and center of the baking tray, the upper and lower temperatures of each fruit are different, in order to make the heating even, except for the first day, the upper and middle should be heated every day. , The lower oven changes the levels, turning and pressing the edge and center fruits to achieve consistent heating. Due to differences in maca quality, maturity and size, individual maca that cannot be dried in the first drying operation should be selected and re-dried.
When the maca is just picked, the water content is 70%, and it is suitable to be stored at a water content of 10-20%, and the drying temperature is below 50°C. It is recommended to use two units to dry the maca in the form of bidirectional left and right convection, so that the drying temperature is even.
