  The fruit of Hericium erinaceus is round and thick, white when fresh, from light yellow to light brown when dried, with a narrow or slightly short stalk at the base, and an enlarged upper part with a diameter of 3.5-10 cm. Hericium erinaceus is very delicious, mellow and delicious.

Hericium erinaceus drying process:

  After harvesting, Hericium erinaceus needs to be sorted according to size in time. After sorting, it is ready to be plated and dried. Before drying, the drying room must be preheated so that the temperature in the drying room reaches 40°C. When a large number of Hericium erinaceus is sent to the mushroom room, the range of 30°C-35°C can be maintained. Use a lower starting temperature to ensure a good appearance of the dried product. The starting temperature of baking is generally 30°C. Bake for 1 hour. If the temperature is too high, it will cause the tissue to lose water too quickly and the outer surface layer of water. It evaporates quickly, but it locks the moisture in the inner layer to evaporate, which is not conducive to drying. At the same time, it inactivates the activities of polyphenol oxidase and peroxidase. If the activity of the enzyme increases, it will cause browning and darken the color of the dried product. .
  It should be noted that the temperature in the drying room should rise slowly during the drying process. Generally, the temperature should not exceed 2°-3°C per hour. If the temperature rises too fast and the amplitude is too large, the water inside the Hericium erinaceus cannot keep up with the evaporation rate of the surface layer, and it is easy to form a hard shell on the surface layer, which will further hinder the loss of internal water, resulting in incomplete internal drying, and will As the temperature rises sharply, which increases the activity of phenolase and intensifies browning, the temperature should rise slowly.
  After 7-8 hours of Hericium erinaceus entering the drying room, when it is dried to 5-6 percent dry, you can choose the standby mode, let the drying process stop for 2 hours, so that the inner moisture will naturally move out. The difference between Hericium erinaceus and other edible fungi is that the individual is large in spherical shape. If one layer is used for drying, although the surface has been dried, the internal water content has not fallen below the safe water content, so it is easy to regain moisture during storage and become moldy. Therefore, when it is dried to 80% dry, take it out, put it into a box lined with plastic film, cover and seal it, so that the moisture inside and outside reaches a uniform state. This process is called homogenization. It takes about 1 day to evenly wet. The Hericium erinaceus after homogenization is sent to the drying room for the second drying (re-drying). The temperature should be controlled at 55°C, and the highest temperature should not exceed 60°C. Generally, it takes 3-4 hours to dry. A total of 12-18 hours is required for initial drying and re-drying.
  Strengthen humidity management, the drying process of Hericium erinaceus, humidity management is mainly achieved by adjusting the size of the air inlet and exhaust outlet. The large amount of water evaporated by Hericium erinaceus at the initial stage will form more hot air in the drying room, which must be discharged in time. At this time, all the air inlets and fresh air valves should be opened so that the hot and humid air in the drying room can be discharged from the exhaust outlet. Fresh air is drawn in from the air inlet. With the extension of the baking time, the water in the Hericium erinaceus will gradually decrease due to evaporation, so the air inlet and the new air valve should be closed accordingly. Within 1-2 hours before the end of drying, the air inlet and exhaust should be closed.
