Introduction to garlic

  Garlic should be harvested in spring and summer, hung in a well ventilated place, dried or roasted until the skin is dry. It has pungent smell and can be used as food, seasoning and medicine.

Garlic processing steps

1. Treatment of raw garlic
There are five steps: material selection, cutting, peeling, and selection. The material selection needs manual operation. Pour the garlic on the garlic selection table, and pick out the wormed and moldy garlic one by one. In the selection process, we should also remove the garlic which is too small. The garlic after cutting is poured onto the elevator one after another and sent to the clover through the conveyor belt. The clover divides the garlic into cloves by using the rubbing force generated by the upper and lower rubber belts with different speeds.
2. Peeling
A layer of garlic skin is attached to the separated garlic petals, which is tightly attached to the garlic meat and needs to be removed before processing. Turn on the power supply of the peeling machine, set the working pressure and temperature of the peeling machine, the working pressure is 9-11 kg/cm³, and the temperature is 45 - 50 . When the pressure and temperature rise to the specified range, pour the garlic into the peeling machine. After the cover is covered, start the work switch, and the peeling machine will automatically peel off the garlic. In order to ensure the quality of the product, the peeled garlic should be selected.
3. Dehydrated garlic slices
After peeling, the selected garlic petals will inevitably have dirt and dust attached to them. Before dehydration, these garlic petals must be thoroughly cleaned. Put the garlic into the cleaning machine, and rub the garlic through the air bubble continuously. The dust on the garlic is washed away. The garlic skin floats on the water, and the garlic will sink. Use the fence to take out the garlic skin. After disinfection, the garlic petals should be washed with clean water, and the water can be drained to prepare slicing. Slicing is to enhance the dehydration effect and reduce the storage volume.
4. Cleaning
The sliced garlic slices are cleaned again by the bubble cleaning machine, and the mucus and sugar on the surface of garlic slices are cleaned by the rubbing of bubbles. The cleaning time is 3 minutes and the water temperature is about 10 .
5. Drying
In order to shorten the drying time, centrifuges should be used to dry the cleaned garlic slices. When the garlic slices are cleaned, the garlic slices are packed with permeable gauze bags, and then put into the centrifuge package by package. Each time in the centrifuge into the amount of garlic is 25-30 kg, centrifuge speed is about 1200 revolutions per minute, drying time is 30 seconds, after drying garlic can be dried.

Garlic drying process:

  The dehydrated garlic slices are dried by the heat pump dryer. The specific method is as follows: evenly lay the garlic slices in the grid plate of the dryer, insert the grid plate into the material truck, push the material truck into the drying room and turn on the host. During the drying process, the temperature should be controlled between 55 and 75 , and the drying time should be 10-12 hours. The standard of dried garlic slices is: normal shape, white color, moisture content of 4% - 5%. After drying, there are still some garlic peels in the garlic slices. At this time, it is necessary to carry out air separation and peeling operation.
The moisture content of dried garlic slices was slightly different due to the uneven size. In order to achieve the same water content, water balance should be carried out. Put the dried garlic slices into the plastic bag, tie the mouth of the bag, and put them on the shelf for about 3 days.

The moisture in the material is vaporized and evaporated by the form of hot air, and the evaporated water vapor is discharged by the moisture discharge system, thereby achieving the purpose of drying the drying material.
