What is it the fruit drying process?
The process flow of fruit dryer processing is mainly divided into the following steps: picking, cleaning, peeling, pitting, cutting, pickling, placing, drying, and packaging.1:Picking ripe and plump fruit. 5:Drying processing is an important process of fruit drying, which determines the quality of the finished dried fruit. Generally, the fruit drying process is divided into four important stages: preheating, drying, ripening, and shrinking.
Warm-up: set the temperature to about 35°C for half an hour.
Drying: Raise the temperature from 40 to 55°C, set the temperature up to 5°C each time, and the duration is different each time. It needs to be determined according to the fruit varieties and drying requirements. A small amount of moisture can be discharged in the early stage, and the amount of moisture can be increased in the later stage. The entire period is approximately 6 to 12 hours.
Ripening: Fruits have higher sugar content. This stage is also called saccharification. Because of the higher sugar content, the moisture is not easy to disperse. Therefore, the temperature needs to be increased. Set it to about 55 to 65°C for 2 to 4 hours. Pay attention to timely dehumidification.
Shrinkage: At this time, the moisture content inside the fruit is low, and the shape has tended to a stable shrinking state, but the moisture inside the whole fruit is uneven. It can be used continuously at 55°C and drying for 2 hours until the internal moisture content drops to the expected requirement. The whole drying can be completed.
6:Pack the dried preserved fruit in time to prevent deterioration or re-moisture and ensure the drying quality.
