Introduction to fig

  Dried figs do not have any chemical additives, and have a strong and sweet taste. Figs like a warm and humid climate, are resistant to drought, are not cold-tolerant, and are not tolerant of waterlogging. It is suitable for cultivation in sandy loam or clay loam with good drainage.

Fig drying process:

  Figs can be dried whole, or dried after being cut. The drying time of the cut figs should be faster than the drying of the whole figs. First, clean the figs, remove their stalks, and then cut them into half. , Can also be cut into block strips, and then peeled and color-protected step by step.
  Fresh figs contain water in the form of free water, colloidal water and combined water, with a moisture content of 75-80% and high sugar content. If the sun is not strong enough during natural drying, it is difficult to dry the figs. Depending on the size of the lumps, generally the initial setting temperature should be in the range of 70°C-85°C, so that a large amount of water in the figs will evaporate in a short period of time, and the moisture removal during these 4 hours should be controlled at 50%. In the second period of 8 hours, the temperature is based on the range of 60°C-70°C, the dehumidification time is slightly shortened, and the humidity is controlled at 30%. In the third period of 5 hours, the temperature decreased by 50°C-60°C, and the humidity continued to decrease to 10%; the whole process took about 17 hours, and the moisture content of the figs dropped to less than 15%.
  If the whole fruit is dried, it will take longer. First, evenly spread the fruit on a rack cart, push it into the drying room and dry for 25-30 hours, then push it out of the drying room in a cool place for one day, and then push it. Enter the drying room for the second drying. After the figs are dried and cooled, there will be a softening process. Be careful to protect them with plastic film to prevent the growth of bacteria. After about 2 days of softening process, the bag can be sealed and packed into storage.
