1. Material selection

2. Cut

When cutting into the mouth of the fish, cut the blade diagonally to the left and right to cut the eyeball, allowing the water in the eyeball to drain out for drying. And use a horizontal knife to cut the junction between the mouth and the esophagus to facilitate drying and removal of internal organs. The cutting edge should be straight and symmetrical. The first knife should leave a little distance near the gland hole. Otherwise, it will be easily curled in the sun, water will deteriorate, and the drying will be slow.
3. In addition to internal organs
Before removing the internal organs, remove the ink sac and gently pull up the ink sac gland. If the ink sac is slightly forward, pull it back, and then gently pull it forward, and then carefully remove the ink sac to stop the ink. Pollution of white meat noodles, affecting washing and appearance. When removing the internal organs, start from the tail end, tear it to the head, and tear it to the vicinity of the gills. 4. Washing
Put the eviscerated cuttlefish in a fish basket, each basket is about 5 kg, and place it in the sea water transfer basket to soak and wash away the ink and dirt adhering to the cuttlefish body.


Cuttlefish drying process:

  Drying is generally required to be carried out at a relatively low temperature, and the temperature is set to about 40°C. In order to avoid the temperature is too high, the protein denaturation, destroy the quality of drying. At the same time, avoid rapid drying, which will cause the cuttlefish surface to crust and form false drying. In the heat pump drying room, the negative pressure fan is used to increase the circulating air volume and wind speed in the drying room, and the drying is uniform and slow. While maintaining a large circulating air volume and a high wind speed, the cuttlefish can fully contact the air, and the water vapor evaporated from the cuttlefish is taken away under the action of the circulating wind, and then the water vapor is condensed and filtered out by the unit to be discharged out of the room.
Since cuttlefish are not only high in water content, but also in fat and grease, cuttlefish drying should avoid moisture staying on the surface of the squid body, causing poor moisture drainage and causing bacteria to grow. Usually, the feed amount of wet cuttlefish is 4-5 jin, and you can get 1 jin of dried cuttlefish after drying. The dried cuttlefish has good quality, bright color, and can maintain the best results.
