How to dry cocoa beans
The main producing areas of cocoa beans are Central and South America, West Africa and Southeast Asia. Cocoa beans (raw beans) contain a lot of nutrients. And because the melting point of cocoa butter is close to human body temperature, it has the characteristics of melting in the mouth, maintains a certain hardness at room temperature, and has a unique cocoa flavor, high nutritional value, and is not easy to oxidize. It is the main raw material for making chocolate.Cocoa beans or seeds removed from the pods are packed in boxes or stacked and fermented. Fermentation, which lasts three to nine days, removes the bitterness of the cocoa and produces a raw material with chocolate characteristics. The result is dark brown, fully fermented cocoa beans, which are then ready for the drying process. If cocoa beans are to be preserved, they must be dried. So, how to dry cocoa beans? There are two methods. According to the different output, natural drying is selected for small output and manual processing is selected for large output.
Natural method
Spread the threshed cocoa on the prepared drying field for drying. The thickness of the seeds is generally about 10 cm. When the water content of the seeds is high, it can be appropriately thinner. On the contrary, when the water content of the seeds is not very high, it should be appropriately thicker. It should be turned frequently when drying to allow the seeds to dry evenly. After about 4 to 5 days, when the seeds can be broken with teeth, the water content will drop to the storage standard (about 12% to 13% water content).
This traditional method of drying cocoa bean is economical and does not require any investment. However, because the drying effect is greatly affected by the environment and is not easy to control and even defective cocoa bean may appear. What’s more, the traditional drying process is time-consuming and labor-consuming, and drying cocoa beans requires a huge space, if you want to dry cocoa beans in large quantities, it is recommended that you use a professional cocoa bean drying machine.
Manual processing
The method of manual processing is to use a professional cocoa bean drying room. The cocoa bean dryer room is equipped with a small cart with a tray and a tray rack. When we dry the cocoa bean, we lay cocoa bean in the tray, put it on the tray rack of the cart, and then push it into the cocoa bean drying room for drying.
The heat source of the cocoa bean drying room is air. The heat in the air is absorbed by the heat pump compressor. After compression and release, a large amount of high-temperature hot air can be obtained, so as to realize the continuous and uniform drying and processing of cocoa bean.
