Air-dried chili/pepper method?

1. Choose dry, anhydrous, intact peppers with pepper stems
2. Do not cut or clean

4. Hang it in a place where it won't be rained, is well ventilated, and can be exposed to the sun every day

How to dry chili/pepper in large quantities?

  Due to the different quality and maturity of peppers, unsuitable peppers should be picked out before drying. When loading, the peppers should be evenly laid, with a thickness of about 5 cm. The fresh peppers enter from the upper layer of the dryer and turn layer by layer until the lower layer is discharged. The moisture content of the pepper raw materials is very high, generally 75%-85%. The pepper should be dried until the moisture content is 50% and the pile is sweated, and then the second drying is carried out. The pepper drying temperature can be adjusted at 60℃—80℃. The segmented drying method is adopted, which is currently the superior method of pepper drying. The use of segmented drying has a great influence on the quality of the pepper, the drying time, and the drying volume. Peppers have obvious softening and swelling during the drying process. The dried peppers are uniform in color, rosy and smooth, and have a balanced moisture content.

The operation points of mass drying pepper:
1.Choose fresh peppers that are fully ripe, normal in color, and intact fruit.
2.A large number of fresh peppers are required to be well ventilated during transportation and stacking, especially the height of the stack should not be higher than 1m, and the stacking time should not exceed 36h.
3. Removal of pepper stems, leaves, dust, and other debris through pretreatment
4.During the drying process, the thickness of the material and the drying temperature should be selected according to the requirements of the processing technology so that the moisture content of the dried peppers can meet the storage requirements.
5. The selection and inspection must be carried out after the dried pepper has naturally regained moisture for some time, otherwise, the dried pepper is easy to break.
6. When packing and warehousing, pay attention to the dry, ventilated, and stacking height of the warehouse to avoid the regain, mildew, and breakage of dried pepper peppers.
