Introduction to cherry:
The height of the cherry tree is 2-6 meters, and the bark is off-white. Branchlets gray-brown, tender branches green, glabrous or sparsely pilose. The fruit is rich in sugar, protein, vitamins, calcium, iron, phosphorus, potassium and other elements.Cherry processing steps:
1. Raw material processingChoose the varieties with bright skin color, short stalk, small nucleus, uniform fruit size, sweet taste and less juice, remove moldy, immature fruits, then remove the stalks, put them in a basket, and wash in a sink or basin with running water 2-3 Second, remove impurities and remove the stalks by hand.
2. Soak alkali rinse
In order to shorten the drying time, it is best to blanch the cherries in 0.2-0.3% boiling lye for a while, then rinse them in clean water to remove the lye, and then put them in the basket for 5-10 minutes and drain the water.
Cherry drying process:
1. Sulphur fumigationPut the fruit into the baking tray and send it to the sulfur smoker. Put sulfur in a bowl, add wood chips and other combustion aids, close the door of the sulfur fumigation chamber after lighting, and smoke for about 1 hour. Generally, 2-3 kilograms of sulfur powder is used per ton of fruit.
2. Drying and softening
The 3P machine should be equipped with a drying room of about 15 cubic meters, the 6P machine should be equipped with a drying room of 25-30 meters, and the 12P machine should be equipped with a drying room of 40-45 meters. Spread the sulphurized cherries evenly on the baking tray and send them to the drying room for drying. At the beginning, the temperature is controlled at about 60℃, and the air humidity is continuously dehumidified, and the air humidity is reduced to about 50%. When it is slightly dry, the temperature is increased to 75℃-80℃, and the air humidity is reduced to about 25%. Take it out after 8-12 hours. Pick out the undried fruits and place them on another baking tray to dry again until the air humidity drops to 25%. The internal humidity of the dried cherries should be at 18% moisture content.
