2. Treatment
Clean the selected raw materials. The fruit of candied jujube is small, so it is unnecessary to peel and core.
3. Cut lines
The fruit is cut to facilitate the penetration of sugar. The fresh jujube peel can be cut by hand. The fresh jujube peel can be cut spirally from bottom to top. Each jujube should be scratched about 10 times. The scratched lines should be evenly distributed on the fruit surface, so that the two ends of the jujube are full, and the depth of the scratched lines is not more than 1 / 3 of the pulp thickness. The machine can also be used to cut the jujube fruit surface into dense and neat longitudinal lines. Striate spur about 2 mm. The cutting machine is tubular structure. 30-50 blades are installed in the iron tube according to the spacing of the grooves. ②Storage of candied jujube
The raw materials are frozen. After processing, the raw materials are directly placed in - 18 ℃ cold storage. The storage period is more than 8 months. It is convenient to use as soon as it is taken. It can save the procedure of raw material precooling and quick freezing, and ensure the quality of raw materials.
Processing of candied jujube:
1. Sulfur treatment of raw materials
After thawing before processing, the raw materials need to be treated with sulfur to inhibit the deterioration of the thawed raw materials in the air, and at the same time, it can increase the brightness of the products and keep them fresh. Usually, 1% sodium bisulfite solution is prepared, and the raw material is soaked in the solution for 1 hour and then fished out.
2. Rinsing of raw materials
The raw material after sulfur treatment is rinsed before honey making. In order to remove the sulfur odor brought by sodium sulfite. When rinsing, the water should be changed many times to reduce the residual sulfur dioxide to less than 20ppm.
③Production of candied jujube
1. Cook with sugar and add cold syrup
Heat and boil 50% sugar liquid in stainless steel pot, put raw materials into sugar liquid, mix well, make sugar liquid cover jujube surface, add cold syrup when boiling for 4-5 minutes, turn quickly to make sugar liquid evenly distributed, at this time, boiling jujube liquid stops boiling, and slowly boil until sugar liquid boils again. Add the cold syrup and repeat for 3 times. The raw material begins to soften. The best dosage of cold syrup is about 10% higher sugar concentration.
2. Addition of dry sugar
When the raw material becomes soft and there are fine lines on the surface, dry sugar is added to the boiling jujube liquid. Boiling while adding dry sugar, a total of six times. In the first three times, add 50g dry sugar per 0.5kg raw material and 15g boiled Jujube Syrup (the boiled Jujube Syrup is recycled). In the fourth and fifth times, add 80g dry sugar per 0.5kg raw material and 15g boiled Jujube Syrup. In the sixth time, add 100g dry sugar per 0.5kg raw material. After boiling the syrup for 20 minutes, when the jujube is translucent and the soluble solid content of the syrup is about 70%, the honey making process is over.
3. Tangkui
The raw materials of sugar boiled jujube need not be taken out from the boiling sugar solution. After soaking for 24 hours, the sugar solution is drained and dried.
Candied jujube drying process:
The raw material was dried at (60 ± 2) ℃ for about 12 hours. The temperature was kept at 55 ℃ - 65 ℃ in the first 4 hours, 65 ℃ - 70 ℃ in the middle 5 hours, and then dropped to 65 ℃ in the last 4 hours. When the moisture content of the jujube reached 20-25%, the jujube could be pushed out of the drying room. After that, the jujube was pressed by the jujube press machine or manually to improve the appearance of the product, The drying time is 20 hours, the temperature is 65 ℃ - 70 ℃, and the moisture content of the finished product is 16%.
