Introduction to bamboo shoot

  Bamboo shoots are the young shoots of bamboo, also called bamboo shoots. Bamboo is a perennial evergreen grass family plant, and the edible part is a nascent, tender and fat, short and strong bud or whip. It is mainly distributed in areas where the annual rainfall is 1000-2000 mm. The optimum temperature for the growth of moso bamboo is the annual average of 16°C-17°C, the average temperature in summer is below 30°C, and the average temperature in winter is about 4°C.

Bamboo shoot drying process:

1. Warm up 90 minutes in advance
The preheating time is determined according to different ambient temperatures. The main reason is that the temperature rise must be stepped and stepped. Preheating is very important. The drying temperature preheating is set to 46°C, and the temperature is gradually increased to about 60°C after 90 minutes in the preheating stage. If the preheating temperature is too high, the bamboo shoots will explode.
2. Drying + dehumidification mode for 300 minutes
The temperature is set to 45°C for drying, and the humidity is set to 50%. The drying room maintains a constant humidity and constant temperature inside, and the relative humidity in the drying room is maintained at 68%.
3. Drying + dehumidification: the temperature rises to about 55°C
Enter the bamboo shoot drying mode, dehumidify regularly (dehumidify for 30 minutes, stop for 5 minutes), keep the relative humidity in the drying room at 50%, and bake for 6 hours. At this stage, the color of the bamboo shoots is fixed to ensure that the color of the bamboo shoots is golden yellow.
4. Drying + dehumidification: the temperature is adjusted to about 60°C
The relative humidity of the drying room is maintained at 35% for a total of about 12 hours. The humidity is drained slowly to maintain a certain degree of dryness.
5. Drying is completed: the temperature is adjusted to about 65 °C
The relative humidity of the drying room is kept at 15% for about 10 hours, until the bamboo shoots are completely dehydrated and dried into yellow or golden yellow.
6. Pack it into a bag
The dried bamboo shoots are first air-cooled, and after the original heat of the bamboo shoots have been radiated to room temperature, they are classified according to the individual size and tenderness of the bamboo shoots, and then packaged and stored.
