The drying temperature of Momordica charantia L. is suitable for middle and high temperature. The drying temperature should not be too low or too high. It is suitable in the range of 45 - 65 . If the temperature is too low, the drying speed is slow. If the temperature is too high, the color quality and nutritional components of bitter gourd will be greatly affected, and the tissue structure will become hard and the rehydration ability will be poor.
The influence of wind speed on drying process is more important than temperature and thickness. The suitable wind speed is 1.9-2.4 M / s. The appropriate wind speed can take away the wet air from the surface of bitter gourd slices in time and accelerate the evaporation of water on the surface of dry bitter gourd. When the wind speed is too low, the drying rate is slow. However, when the wind speed is too high, most of the heat on the surface of the bitter gourd slices is taken away by the air flow before it is transferred to the inside of the dried bitter gourd, which can not speed up the drying speed, but also cause heat loss.
In the drying process, the dehumidification and color fixing of Momordica charantia slices is to ensure its natural green color, that is, through the above appropriate temperature, wind speed, slice thickness, effective use of heat energy to achieve the purpose of rapid dehumidification, dehydration and color fixing of Momordica charantia slices, so as to avoid the change of color or internal components under inappropriate temperature and humidity parameters.
